I only did three things this past weekend: teach barre, work, and watch football.
OK, that’s not entirely true…I did attend a TidalWheel class yesterday with Polly and have dinner with some friends Saturday (while watching football); however I was quite productive, yet I still managed to balance it out with some social time. That’s a big accomplishment for me these days!
Breakfast on both Saturday and Sunday entailed some pumpkin pancakes
Lunch on Saturday – after spending 3 hours at barre – was a pretty random plate: leftover curried cauliflower, egg-avocado salad (+ diced red pepper) with Red Hot Blues
That night, a few friends gathered to watch the Clemson v. FSU game. I brought chips, hummus, salsa and beer to snack on before the main meal
Chicken kababs, potatoes, steak and a spinach salad that was to die for. I will be recreating this for Thanksgiving dinner!
There was a lot left over and I luckily got to take some home to have for lunch the following day
Sunday morning, I just so happened to take my blood sugar. After a night of a few cocktails, I was expecting it to be really high, as alcohol turns to straight sugar in your body once ingested. I was surprised to find the exact opposite:
It was the lowest it has ever been! Then I remembered that alcohol consumption can result in hypoglycemia within 24 hours. This makes sense: your blood sugar will rise suddenly, then crash back down. I don’t drink that much any more…the headaches and lack of productivity are reason enough…but seeing some cold-hard numbers makes you reevaluate it even more.
Dinner last night was the last batch of lentil stew, topped with avocado and cilantro
Plus a 3-ingredient cacao cup for dessert
