It is a beer and pizza kind of night. After being stuck in traffic for an hour and a half on my way back from Virginia Beach, I was craving some comfort food. However, in trying to stay in the realm of “healthy,” I remembered a recipe for pizza crust I pinned from Tina’s blog. Although I don’t adhere to a paleo diet (the following servings of beer and cheese being exhibit A and exhibit B), I loved the sound of these ingredients:
I tweaked this recipe a bit to serve 1
- 1.5 cups + 1 T flaxseed meal
- 1/2 c almond meal
- 1/2 tsp sea salt
- 1/2 T honey
- 1 tsp baking powder
- 1/2 tsp Italian mixed dried herbs
- 1 egg + 1 “chia egg” (1 T chia seed + 3 T water; let sit for 10 mins)
- 1.5 T coconut oil, melted
- 1/4 c water
- pizza toppings of choice
Directions:
Preheat oven to 425 degrees. In a large mixing bowl, combine flaxseed meal, almond meal, sea salt, baking powder and Italian herbs together until lump-free
In a separate bowl, beat together eggs, oil, honey and water until smooth
Add wet ingredients to dry, and blend until smooth
Note: my “batter” was still a bit lumpy before forming it into a patty, but it still turned out great!
Using your hands (i.e. fun part), form your crust, and place on a foil-lined baking sheet.
Cook for 15-20 minutes, until edges are browned and center is done
Although it was just 20 minutes, I still had to snack on an apple to tide me over. Ha!
Add toppings of choice and cook for another 10-15 minutes
Done and oh my gah…it was better than expected. Love it when that happens.

Yum! I make a Paleo pizza very similar but without the flax egg and love it! I actually like it better than regular pizza crust
