Drippy Almond Butter

Happy Monday!

I bolded the “happy” for a reason. I awoke this morning with a little bit of the Sunday (long-weekened-Monday?) blues and have spent the first half of the day trying to cheer myself up.

First thing’s first, I needed some endorphins, but instead of opting for a solo workout, I went to RPM at my gym.  I knew I needed the positive energy of a group exercise class.

I then headed to Barnes & Noble to buy a new book.  Unfortunately, there were no more copies of Blackberry Winter which I have  been wanting to read, so I picked up The Tiger’s Wife.  I recognized the title from Jenna’s blog and thought it would be a good read.

While drinking my green smoothie and cup of coffee, I got a little Vitamix-happy and made a couple batches of nut butter.  Nut butter always makes me feel better

Cinnamon-vanilla Hazlenut Butter

  • 2 cups hazlenuts
  • 1/2 tsp vanilla
  • 1 T cinnamon
  • EVOO to get the blender going
Drippy Almond Butter
  • Roasted almonds
  • EVOO to get the blender going

I’m normally a thick and crunchy almond butter fan, but the Vitamix makes the best drippy almond butter, I’ve learned to embrace it.

 I am going to spend the rest of the day with my dog and my book.  A 5:30 PM yoga class might also be in order.
