As you know, I received a Boxtera box last week in order to explore a potential partnership and review some of the products. After consuming most of its contents, there were some winners, some losers, and some in between. Since I try to emphasize optimism on the blog (I have my pessimistic moments, believe you me) ], I will highlight the ones I liked best:
Raw Crunch bar
It both looked and tasted like a “raw” bar
However, I find this to be a good thing. The “earthier” the better in my opinion. Another plus was that while it said it was “made with organic dark chocolate” the taste of chocolate was not overpowering at all. Sometimes when I want a snack, I don’t want dessert. There was a hint of sweetness, but nothing more. But I still prefer Health Warrior Chia Bars any day
The Perfect Snaque’s seasoned sprouted lentils
These were SO good. Surprisingly good actually. They reminded me of the BBQ flavored Pringles. Do y’all remember those??
Gah, I took down some tubes of Pringles when I was a kid…
Artisana Blue Algae nut butter
The initial taste was a little weird, but maybe it was because I was thinking about eating algae during that first bite. Then it grew on me and tasted like healthy icing. My taste buds are quick to adapt!
And last but not least, my fave:
Good Life Granola. Those who know me won’t find this hard to believe. I love granola…so much so, that I can’t really keep it in my house or I’ll take the bag to the face. But with two-250 calorie servings in this one bag, I made myself exercise some portion control. It took some will power, but made for a quick dinner two nights last week!
Speaking of dinner, I just made the weirdest sandwich. I’m due for happy hour like right now, and needed to get some food in me before heading out. I wanted an almond butter sandwich but was out of bananas. I immediately took out the container of cooked butternut squash I prepared last night, and then it hit me.
Almond Butter Sandwich with Cinnamon Butternut Squash Spread
This is another instance when weird is worth it.
- 1/2 cup cooked butternut squash
- splash of almond milk
- cinnamon
I placed all ingredients into the Vitamix
and put it on medium speed for about 10 seconds
Then spread it on untoasted whole wheat bread with some almond butter.
Don’t knock it till you try it!

That sandwich actually sounds fantastic! My favorite sandwich is pb, jelly, pumpkin, and cinnamon, so yummy!
